Join us for an introduction to Upland Hunting at the Hawkeye Hunting Club in Center, Texas this December 14th-15th!

Sample Itinerary

This event is crafted specifically for those new to bird hunting, focusing entirely on upland birds. Arrive at noon on Saturday, December 14th, at the Hawkeye Hunt Club to start with a light lunch, then delve into shotgun instruction at the 5 stand and wobble trap. We'll guide you through proper gun mount and preparing for upland hunting. Next, we'll transition to the field to demonstrate what a quail hunt entails, including proper positioning, field etiquette, and working with pointing and flushing dogs.

After our field session, return to the lodge for a culinary experience with wild game chef Holly Hearn of Game Girl Gourmet. Holly will lead a private cooking demonstration on handling and preparing upland birds, complementing them with perfect side dishes and wine pairings.

Enjoy a family-style wild game dinner with wine, offering a chance to mingle and ask questions of the chef, hosts, and guides.

On Sunday, after breakfast, we’ll head back to the field for a half-day upland hunt, practicing everything you learned the previous day in groups of two over dogs before departing for home around noon.

Experienced hunters are welcome to attend as well. Let us know and we will rearrange Day 1 to include an extra upland hunt.

Hawkeye Hunting Club

Hawkeye Hunting Club is nestled in the rolling hills of East Texas on 1700 acres, conveniently located between Dallas, Houston, and Shreveport, LA. They offer a plantation style hunting experience in the Piney Woods of East Texas. Large covey flushes are common as hunters are treated to great shooting over some of the finest pointers and flushing dogs anywhere.

Meet Your Professional Chef - Holly Hearn

While attending the event, guests will be treated to a private culinary experience with a wild game dinner by renowned chef Holly Hearn of Game Girl Gourmet. This Galveston-based chef has been butchering wild game for over a decade, and cooking it at a gourmet level for seven years. Her love of other cultures, flavors and traditions outside of her own translates into every element of her recipes and each of her plates.
